Michael d'Ennery
Born and raised in New Orleans, LA, Michael d'Ennery started cooking at a very young age. With a family history in food service, becoming a chef was a natural progression. Phyllis, his grandmother, wrote two cookbooks on New Orleans for the popular "Dining In" series and was the founder of the annual "Le Fete" festival featuring local restaurateurs.
A graduate of Johnson & Wales University, Michael worked first in Charleston, SC, and for ten years in San Diego, CA in fine dining and hotels where he started to craft what would become his signature style. From Johnson and Wales, comes the Classical French training; from San Diego, an understanding of Pan Asian and Latin American cuisines with the appreciation of fresh local ingredients; and from multi-cultural New Orleans, a deep love for Cajun/ Creole cuisine.
"I have always been very grateful to my family, especially my mother and father who introduced me to so many different foods at such a young age; they truly shaped an experienced palate very early." Now, Michael focuses on the best quality ingredients, local whenever possible, globally influenced and prepared with Southern love and warmth here in New Jersey.
